Cold Spinach Artichoke Dip (GF/DF)

 

 

In my dairy days, Spinach Artichoke Dip was one of my favorite foods, and I had an amazing recipe for it that was simple, hot, and ooey gooey.  Alas, lactose intolerance has set in and eating that these days would keep me up all night with painful acid reflux.
Spinach Artichoke Dip = Pain is a sad thing.  So, I went about creating a dairy-free version. I haven’t navigated a hot version yet, but this cold one has become a favorite for the kids and me.    Spinach Artichoke Dip 

Cold Spinach Artichoke Dip (Dairy Free, Gluten Free)
A chilled dip with tangy artichokes, non-dairy creaminess, nutrient-rich spinach, and a punch of garlic

Ingredients
  1. 3/4 cup mayonnaise (we make ours at home with an immersion blender and olive oil)
  2. 1/4 cup coconut cream
  3. 2 cups spinach (fresh)
  4. 2 cloves garlic
  5. 1/2 cup jarred artichoke hearts (I use marinated, but you can use plain and season to taste)
  6. Cooking oil of choice, salt, pepper
  7. Dippers: Mary's crackers, corn chips, carrot chips, cucumber slices, etc.
Instructions
  1. Mince the garlic.
  2. Lightly sauté the spinach and garlic in a small amount of you preferred cooking oil (we use olive oil, coconut oil, or lard). When the greens start to wilt, pull it off the heat. The garlic will still be mostly raw (and wonderfully pungent).
  3. Mix the spinach and garlic with the rest of the ingredients, save for the salt and pepper. I use an immersion blender in a wide-mouth mason jar, but you could also use a food processor. If you don't have either of these, finely chop the spinach and artichoke and then hand mix.
  4. Add salt and pepper to taste.
  5. Chill to thicken and blend flavors.

    I read your recent article at mothering.com and decided to checkout your website. I like the layout it’s very design friendly and the hand drawn menu icon are a nice touch.
